Dark chocolate and raspberry cupcakes!

These yummy cakes are super indulgent, but with fruit, so one of our 5 a day, right?! :p

Makes 24

Ingredients :

Cakes –
• 140g self raising flour
• 170g butter
• 170g caster sugar
• 3 eggs
• 30g cocoa powder
• 200g dark chocolate
• approx 54 raspberries (250g should be plenty)

Icing –
• 260g icing sugar
• 130g butter
• 100g dark chocolate

Method :
• Preheat the oven to 180c
• Cream together the butter and sugar
• Add 3 beaten eggs to the mixture
• Add in the flour and cocoa powder
• Melt the chocolate and add it to the mixture, along with 30 chopped raspberries, then spoon into the cases
• Bake for about 25 minutes, or until springy to the touch, then set aside to cool
• For the icing, mix together the butter and icing sugar
• Melt the chocolate and add to the mix
• You now have your icing to apply once the cakes are cool! Top each cake with one whole raspberry
